Again, not complicated recipe by any stretch. Like a lot of cooking, it's really more assembling things on a plate. The trick is not to make too much of a punchy dressing. I suffice with just lemon juice and olive oil. You'll need;

  • 2 small endives, red and/or white
  • one apple of your choosing, but I like pink lady
  • 1 x small shallot
  • 1/2 bulb fennel
  • some chervil or tarragon
  • walnuts
  • cured collar
  • 1 x lemon
  • Olive oil
  • Honey
  • salt + pepper

Slice the endive(s)
